GLUTEN FREE BANANA MUFFINS
✔️1 tsp baking powder
✔️1 cup oatmeal flour
✔️1/4 cup melted coconut oil
✔️1/4 rice malt syrup
✔️1 egg
✔️1 tsp cinnamon .
✔️2 TBS sultanas .
✔️2 mashed ripe bananas .
So yummy, especially with a dollop of organic butter and served warm!
GREEN VEGGIE SLICE
Mix 1 zucchini, 1 whole broccoli, 1 bunch of broccolini in the food processor and add 6-8 eggs, 1/4 TBS coconut oil (melted), 2 tsp pesto, 1/2 cup gluten free self raising flour and seasalt and pepper to taste… ???? I sometimes add Feta in as well, that can be up to you!
Bake on 180 deg fanbake for 30-40mins or until cooked through and golden.. So quick and easy and Leo loves this so it’s a hit with the kids!!
